Highland cows (known locally to Scots as 'coos') are the oldest cattle breed in the world, originating from the Highlands and the Western Isles of Scotland. They were originally black, but the Victorians selectively bred them to become the standard 'ginger' colour we all recognise and love today. Depending on the breeder, you can see Highland cows in the whole natural spectrum of colours or, like us, you can make one in every colour!
